Happy Lunar new year !
This weekend has been a wonderful time for three of us. Of course it was a bit sad that we can’t go back to Taiwan with families and can’t invite friends to celebrate with us but we still managed to cook something tradition and had a good time.
This is the first time I made this aduki beans rice cake and were very excited about it. This is so easy to make by using rice flour and shop-bought beans. ( of course this is not a traditional way 🤣)
After steaming it and let it cool down, then I normally just slice it into a few pieces and pan fried then until the skin turns a bit crispy.
Another way is wrapping the pieces into puff pastry and bake! Delicious, I promise !

初四了,終於來寫一篇跟過年有關的食物了!🤣
因為身在英國的我們,過年期間當然還是正常上班。所以我早早就把年菜上網訂購好,只簡單的做了這塊紅豆年糕來應應景。
這次我用的是泰國的糯米粉,使用起來我覺得很可以,也沒有什麼奇怪的粉味、霉味,大家可以嘗試看看。紅豆罐頭更是偷吃步的在英國超市買了adzuki beans 紅豆罐頭,買回家後把水瀝掉後直接加入黑糖(Muscovado sugar)攪拌蜜一下。
接著我是以約糯米粉+水+黑糖=1:1.3:0.5 的比例,通通攪拌均勻,再加入紅豆粒。
接著就在大碗裡鋪上烘焙紙,倒進米粉糊。大同電鍋外鍋兩杯水蒸到透即可。
放涼後再進冰箱冰硬一點比較好切!
今年我試了包酥皮氣炸的作法,也試了直接不裹粉油煎,通通都很好吃啊!!!!
